I’m a big fan of crustless quiche. I’ve even made it for TV a few times. What’s great about it? It’s easier, it’s lower carb and it’s yummy! Because let’s face it, most of the time the crust of a quiche is soggy anyway, so you might as well do away with the crust and choose a better carb, like a crusty whole wheat roll. the other thing I love about quiche, is it’s a great way to get your protein and use up any veggies you have lying around. Enjoy!
