Why the One More Veggie Challenge? Because eating more vegetables shouldn’t be so hard!

This soup is how I got my kids (and many adult friends) to eat their veggies! The secret to the soup is actually potatoes–it makes the soup very creamy and filling. A little cheese adds some calcium and makes it even more velvety.
I hope you’ll follow the calendar of ideas–I find it really helps to have ready-made list of tips to go by. The calendar is for weekdays–on the weekend, when you have more time to prep, the recipes will come in hand!
Ten Ways to Eat an Extra Veggie Today
- Use canned pumpkin to make a curried soup.
- Serve your eggs with pico de gallo.
- Use Bibb lettuce instead of bread for your wrap.
- Put chopped cucumbers into your egg or tuna salad.
- Order a side of veggies.
- Order French onion or other veggie soup.
- Snack on sugar snap peas.
- Grill zucchini.
- Make a bean tostada for lunch or dinner.
- Add chopped mushrooms to your ground beef recipe
